How can you tell the age of a coin?

Hey there. Trying to work my way around tax regulations,
I'm seeing that Portugal taxes coins held for under a year (short term capital gains) and doesn't tax coins held for more than a year.

How do I know the age of my crypto? Some I've been holding for years, some I have for a week. They've gone through different exchanges, different hot and cold wallets through their lifetime.
